Winter squash is a great ingredient to use in many vegetarian meals. It is very versatile and can mix well with other ingredients. Make sure that the squash that you use for this recipe is unblemished and fresh.

Ingredients:

1 tsp rosemary, chopped and divided

½tsp fresh black pepper

4 tsp olive oil, divided

2 cups broccoli, shredded

2 tsp fresh lemon juice

1 small acorn squash, peeled and cubed

½tsp salt, divided

Olive oil

2 shallots, minced

1/3 cup red and green bell pepper, thinly sliced

¾lb new potatoes, washed but unpeeled

Makes 6 servings

Instructions:

Set your oven at 425 degrees F. Mix the potatoes and squash in a bowl. Season it with salt, pepper and rosemary. Toss to coat the mixture. Coat the baking sheet with cooking spray then spread the mixture on top. Bake for 25 minutes. Make sure to stir once in a while. Heat the remaining oil in your pan. Cook the bell peppers, broccoli and shallots. Add in the potato- squash mixture and cook for a few minutes. Season it with the lemon juice, salt, rosemary and black pepper.
